Your Thoughts & Prayers Needed:
We humbly ask for your prayers for Alina*. As many know, she has a brain tumor. Per Nicolette & Lisette, she is now under experimental medication from Duke University. (*For the Dominguez Klan: Alina is Reemberto's cousin from Atlanta.)
We also ask you keep in your thoughts Alma* who fell down and broke her femur recently... Pedro is being so kind as to be keeping us informed on a daily basis. (*For the Rodriguez klan: Alma is Nancy's aunt. She lives in Miami.)
And from Carmencita: "Please keep Julio, jr. in your prayers. His infamous 'deviated septum/nasal' surgery is finally coming up Saturday Mach 31st* (God willing). May Mary intercede that all go well and for a speedy recovery!" (*We hear it went well though he is in a heck of a lot of discomfort.)
On a much more positive note:
Alicita tells us that the wedding went GREAT! - Lots of 'familia' lots of fun!... (More weddings to follow this year - see list in the box to the left.)
We have a NEW Athlete in our mist!!! From Eddie: Yvonne has competed and completed her first marathon. She took part n the ING Miami Marathon (she ran the half marathon) with a time of 2 hours and 45 minutes. We are all very proud of her and now she is setting her sights on future events. (Pics to follow?)
REMBE Jr GRADUATES!:
Rembe Jr., finally graduates! - AND, he already has a 'real' job with the Wasington Nationals as "Ballpark Operations Coordinator"... This really fulfills his dream of working inside baseball - so needless to say, we are extremely proud of him!!! So, to celebrate this major milestone in his life:

EXTRA TREAT FOR THE MONTH: (Thanks to Pedro!)
PINEAPPLE FLAN -
Recipe from Dra. Virginia Lafuente, Cuba
As preserved by brother-in-law, Pedro Ruso.
1 CAN CONDENSED MILK
1 CAN EVAPORATED MILK
2 CUPS OF WATER
2 BOXES (3 OZ) PINEAPPLE JELLO GELATIN
OR ONE LARGE (6 OZ)
½ tsp SALT
Place the condensed milk and half can of evaporated milk in a saucepan.
Use the other half of the evaporated milk to rinse out the condensed milk can in order to use all of it. Pour into the saucepan. Stir well.
In another saucepan, bring to a boil the 2 cups of water with the ½ tsp of salt
Add the gelatin, turn off and dissolve.
(NOTE: Boiling water in the microwave is dangerous and not recommended.)
Slowly pour the gelatin mixture into the milk mixture and stir well.
Do not do this in reverse! It will clump.
Pour into a mold or individual serving pirex dishes, cool to at least warm, place in refrigerator. Should be firm in one hour. Serve when firm and well chilled.
